Vineyard: Source from the Eyrie Vineyards Original Vines, own rooted and planted in 1966.
Soil: The classic red soils of Dundee - Volcanic, Jory clay
Viticulture: Vines are non-irrigated, own-rooted, Guyot-trained, on 10’ x 6’ and 12’ x 6’ spacing. No herbicides, systemic chemicals or insecticides. Vines are 48 yrs old and planted in two adjacent blocks. Yields are 2.5 tons per acre. Hand harvested. Certified Organic
Vinification: The grapes were picked by hand. The fruit was crushed, pressed and vinified separately. Jason decided to retain the natural crystals that form in the bottle when it is chilled. These crystals are perfect illustrations of the natural expression of the grapes that came into the winery. This cuvée is the epitome of what we jokingly call "eyrodynamics." No sulphur
Aging: Aged in specially made drums on the lees and bottled after 8 months.
