Chiyonosono Shuzo Brewery is located in the Kumamoto prefecture on Kyushu, Japan’s southernmost island. The warmer weather results in a shortened brewing season which can prove challenging to Toji Yoshihiro Inaba and his team. This brewery is revered for introducing Junmai sake back into production after WWII. Chiyonosono was founded in 1896 and the current president is Katsutaro Honda.
