Taka’s estate rice growing philosophy cultivates regionally focused sake full of tension and balance.

President/Toji Takahiro Nagayama is passionate about his estate grower-producer style sake, allowing him to brew sake that represents his personality and to reach all the people who drink it.  He is passionate about the concept of "terroir" and worked with Philippe Pacalet in Burgundy falling in love with Chablis in particular and the interplay of limestone and its influence on wine.  With this in mind he cultivates his rice on limestone rich soils and sources limestone rich spring water to brew his sake.

“Taka” is the first character of Takahiro-san’s name and means “noble.” His unwavering discipline and commitment to technical precision result in elegant but restrained sake.
