Ambitious Viticultural Souls is a pretty accurate way to describe the duo of Morgan Twain-Peterson and Chris Cottrell!  Two gentleman who are always looking for ways to feed their vinous passions and push the boundaries of what came be done and produced in California.  To that end, they created Under The Wire.  A project that grew from a mutual friendship and love for wine with bubbles.  The simple yet unique premise is to make California sparkling wines based on a single vineyard from a single vintage.  Inspired in part by the grower Champagne movement they aim to prove that California can produce unique, delicious and terroir-driven sparkling wines.  Morgan and Chris have signed on several great vineyard sources that create the vins clair that will ultimately become Under The Wire sparkling wines – Bedrock, Brousseau, Hirsch and Alder Springs.  All the wines are made in the classic Champagne method with low dosage additions and extended time en tirage.  Under The Wire is without question one of California’s most exciting projects!
